COMPETITION RULES
Thursday, March 12th at 6pm
Chef’s Meeting (mandatory that at least 1 team member
is present)
ï‚· Location: TBA
ï‚· What will happen: pigs MUST be picked up (pigs provided by La Caja China); rules are gone
over; team spots and layout made public
ï‚· Any custom Caja Chinas can be picked up if you paid the additional fee for one
Friday, March 13th:
Teams have the ability to drop off their equipment at La Ermita start after 4pm; specific load in
times will be given; you do not need to load in on Friday if you do not want to!
Saturday, March 14th:
ï‚· Gates open for teams only at 8am; pigs go in to start cooking
ï‚· Teams will be assigned a parking spot to leave 1 car after tent set up is complete
ï‚· Teams will have a 10x10ft white peak tent provided by us to go in front of their team
area; teams can bring 1 or 2 additional tents (max 10 ft. wide) to put behind the peak
ï‚· All cooking must be done on pavement, concrete, or sidewalk behind your designated
area
ï‚· Pig roast must be ready for judging between 4-4:30pm sharp
ï‚· Team will provide a sample size portion for judging; containers provided by us
ï‚· Panel of judges will announce the 1st, 2nd and 3rd place and tailgate food champion
results at 5:30pm
ï‚· Team will consist of one chef and 3 additional team members (4 total)
ï‚· Guests are welcome in each respective tent area
ï‚· Each team must bring their own cooking device, utensils, table and tent for behind area
ï‚· Creativity at your tent location is encouraged and welcomed; a prize will be awarded for
the most creative tent
ï‚· Ash disposal kits will be provided for Caja China clean up
ï‚· Cleanup of your designated area is required prior to departure after event
Tailgate Food Competition:
ï‚· Teams have the ability to cook a food item other than the pig to provide to the judges to
win; turn in time for the tailgate food will be 2:30pm
ï‚· The best tailgate food provided during the pig roast will be awarded a prize and
announced with the pig winners
ï‚· Please let the Pig Roast Committee team know at the Chef’s Meeting if you will want to
participate in the Tailgate Food Competition
After Pig Roast:
Teams can pick up after the event (not until after 8:30pm) or pick up the next day
